JW Marriott Mumbai Sahar Played Host to Mumbai’s Finest Dessert Showcase

JW Marriott Mumbai Sahar brought together over 25 par excellence pastry chefs from across various sister properties in India, under one roof, at a three-day pastry workshop that began on 17th of July. The chefs, during multiple sessions, exchanged ideas and thoughts about leveraging the academics of baking. As a culmination to the workshop, the team of pastry chefs showcased a premium dessert station for patrons to savour at the JW Café on the 19th of July. The station constituted classic desserts and tartes like the Rare Cheese Lemon Crumble Cake, Hazelnut Praline, Chocolate Feuillant, and the Mille-Feuille Ispahan.
Commenting on this innovative initiative, Chef Santosh Rawat, Multi Property Executive Pastry Chef JW Marriott Mumbai Sahar and JW Marriott Mumbai Juhu, who led this showcase at the property said, “Quality and consistency has been of utmost importance to the team. Whilst the workshop gives us the opportunity to improve the quality of our offerings, it also gives us the scope of collective growth towards newer and elevated standards of service. Needless to say, we thank our patrons who’ve taken pleasure in the fine line-up of desserts on the grand finale day!
The workshop structure provided the chefs from diverse regions a platform to come together and share their expertise and best practices. Day one of the workshop dedicated itself towards better understanding the artistry of baking breads. This was followed by a conversation about personalised in-room amenities for resident guests at a hotel property. Day two witnessed chefs sharing the most recent pastry trends and baking techniques, followed by a group activity that involves crafting premium desserts. Day three covered concepts such as afternoon hi-tea setups, menu compositions, delis and trending wedding cakes. The team of chefs also addressed techniques including finishing, plating, styling and garnishing.
